I love pizza, I mean LOVE, which, to those of you that know me, is no surprise. I’ve only had wood fired pizza a handful of times, none have disappointed me. There are many WFO pizzas I want to try and longer grows my list…everyday. To make a great WFO pizza you need a great oven. Expert pizziolas have agreed that there are three WFO manufacturers to buy from, this story is about one. His family started building wood fired ovens 100 years ago and some say his company now manufacturers “the best.”
